Just about to buy Office, wondering which edition is most stable and suitable
for XP PRO OS, Office XP ?/ Office 200 ? ???

Either, and older versions are fine too. Also note that the
newest version is Office 2003.

In general if you buy a newer version, you will pay more and get
additional features. How to evaluate that tradeoff is a decision
that only you can make.

Unless you have found an incredibly good price on the older Office XP, I
would suggest acquiring the newer Office 2003.
