Although it's been a while, I believe there are several linux based utilities that work well. I think we used Knopix a couple years back. There's Norton Ghost, though I'm not sure if there is a free version anymore.

Yup. PartImage is a Linux utility that works very similar to Ghost, it even supports ghosting to/from a network server and it's available on the SysRescCD live Linux CD. It's very handy, but is a bit more difficult to learn to use than Ghost is.
