If it's OSS (Linux, BSD, or even OSX+fink) I know that some of the neat-o media tools (mplayer/mencoder especially) will strip audio from any source you want.
Otherwise, you might want to look at the dvd ripping programs, they may have options to save-out the audio, but I haven't really played around with them.
Does anyone know of a software program that will rip a dvd but just as an audio file of it. I am looking to get some of the clips off my dvds to put them on my mp3 player. Any help would be greatly appreciated.

best go talk to RIAA and ask them if you can be granted a Licence to ripp Audio from a dvd
