what are the pros of using aluminum case fans compared to normal plastic ones?

Sounds rather dangerous to me....I've been cut from reaching in there while its running (I know, it a stupid thing to do...yet I continue) I don't even want to know what would happen if I was to get sliced by an aluminum fan...... 8O

Personal preference mainly. Some people like the look of polished aluminum on their rigs.

the high speed high quality aluminum ones are quieter, they look cool, and also they are harder to break fins off by accident.
