Need help choosing OS

I just built a new computer system w/ an AMD Athlon 64 CPU (My First Build) and was wondering if you guys could help me decide what operating system to use. Here's a list of the ones I'm considering so far...

Windows XP 32-Bit or 64-Bit
Windows Vista 32 Bit or 64-Bit
Windows Server 2003 32 Bit or 64-Bit

I'm currently running Windows 2000 Professional on an old Pentium 3 system. I love windows 2000 pro, because it's less flashy (bells and whistles) than XP, and less system requirements. However, I want an OS that supports Nvidia's SLI.

I really don't need to run a server so 2003 might not be the best choice, and I have read that vista doesn't support SLI yet. One of the big questions I have is should I go 32-bit or 64-bit? What are the advantages, and disadvantages?

all depends what you gonna be using the PC for?

go 64bit only if you need to run 64bit apps, otherwise right now you don't really have no use for it. 64bit is not fully supported yet by all apps.

as far as sli and xp goes have you seen this?
