Prime95 has become the standard torture test to measure the stability of your machine. Typically you want to turn it on and let it run for 24 hours, or at least overnight. It will tell you how long it ran without errors, or in a best-case scenario it will have no errors after 24 hours.

If you have a dual-core CPU, it's a bit tricky to get two copies of PRIME95 running at the same time; Orthos does this automagically for you.
Also, check out The Ultimate Boot CD. It has all sorts of programs on it, none of which depend on having an OS installed, so it's perfect for checking out builds.
