I'm looking into over clocking this system:

Core2 Duo E6400
Asus p5b deluxe
evga 8800 GTX
OCZ ATI CrossFire 2GB ( PC2 6400 )
Watercooling with Swiftech apogee GTX cpu block, and Koolance 8800 GTX block
Ultra / X-Finity / 600-Watt power supply

If anyone has a guide, or even better more personalized settings as to what I can do.. that would be greatly appreciated.

Get a bigger Power supply. It is hasn't exploded already It will during Overclocking.  That GTX is power hungry and your CPU will consume more power if you OC it.

He doesn't need a new PSU. I know the whole deal about amps vs watts, but the PSU has 38A combined on the 12v rails. The GTX doesn't use more than 150W, and a e6400 even OC'ed won't draw more than 100W.

you'll be fine just go slow and dont expect to get maximum OC in the first day

Nice rig! Plenty fast as-is - gonna be great when overclocked!

I'm actually having trouble with flight Sim X.. but i guess that game is meant to be  optimized for what you like... not everything
