I plan to buy the Yamaha rx-v750 receiver which upconverts s-video and
composite signals to component. Is this what I want for a samsung dlp tv
set? Is the upconversion done to 720p? Apprectiate any advice.

No, it only _converts_ the signal from composite and s-video to
component. It doesn't upconvert resolution, and your video will still be
interlaced coming out of the receiver if the source was originally
composite or s-video.
