If you are going to run at stock speeds or do some mild overclocking then the DS3 is the board to go for. Personally I have spent a bit extra and gone for the DS4, but as u can see in my profile, I am overclocking a lot and the DS4 has much better cooling on it if u want to push the envelope on your chip, but it does cost a bit more.

I ordered the asus p5n-e sli the other day so i'll let you know how that goes. It is supposed to be a pretty good board with the 650i chipset (nvidia ftw).

i thought the op was looking for gigabyte boards? the asus p5n-e is CERTAINLY NOT GIGABYTE.

anyway.

i'd say its obviously between the Gigabyte DS3 (http://www.newegg.com/Product/Product.aspx?Item=N82E16813128012) and the plain S3 (http://www.newegg.com/Product/Product.aspx?Item=N82E16813128017). the DS3 has solid capacitors....jargon for it should last longer... they're both pretty much the same board, both very good, both will allow you to overclock a c2d quite nicely.

if you want onboard raid, go for the DS3.

if you want onboard video, go for the G-DS3 (http://www.newegg.com/Product/Product.aspx?Item=N82E16813128018)

so, there are some gigabyte choices: all nice boards. depends on what you're looking for, they're all very similar, very nice, and very.... nice.

...ran out of adjectives there....
