Depends on the card. An 8800GTS needs one PCI-E connector, while an 8800GTX needs two. You just have to check the card's requirements.

Also, at least in the case of my 8800GTS, it came with an adapter that let you plug in two Molex cables and the other end was a PCI-E connector.

Correct, the 8800 series requires the added cable, all other video cards "so far" are powered by the bus or PCI-E Slot. We will be seeing more need for those cables so look for them when you buy a new power supply. I also hear some are changing to an 8 pin cable.
