Does anybody know if Ubuntu can be run off of a start-up disk instead of just being installed? It would really be helpful to introduce people to the OS on their computers if you didn't have to install and partition their system first.

And it will usually run under VMs :)

Almost any type of VM.

QEMU, Xen, KVM, VirtualBox, VMWare and many more with the exception of VirtualPC which is not Linux friendly.

You can pretty much do anything with it, save for VirtualPC, as linux_0 said.
