You should really post this in the Homebuilt section, but anyway, it's here, so I'll try to answer...
Get the DDR2-800 RAM (the TWIN2X2048-6400C4). That will support up to 3.6 GHz for an E6600 without having to overclock the RAM.
I would avoid the Intel motherboard, overpriced and not that great unless you want Crossfire support, but seeing as you already have an nVidia card, you don't care about Crossfire. I would get the Gigabyte GA-965P-DS3 (and I did get it in fact, that's what I use). If you want to use SLI, get one of the Asus boards, 680i is better, but get the DS3 if you don't need SLI.
Both are in the recommended coolers in the C2D overclocking thread. If you get the Thermalright, match it with this fan. The Tuniq Tower and Thermalright Ultra 120 are better if you can find them (I couldn't on Amazon), but I believe the two I listed would work fine unless you need a really extreme overclock.
