I noticed today that my Sony XS TV is showing a HD signal for every channel
I checked so far. I know this is not true. Is the SA 8000 sending out the
HD signal through the component output no matter what signal is input? This
is messing with the auto "wide zoom" setting I had set for non-HD signals.

I am somewhat a novice on this, so someone correct me if I'm wrong...
I believe it all has to be in HD because your HDTV doesn't support anything under HD on its HD inputs.
You can go into your 8000HD settings and setup the auto wide zoom options.

The box is upconverting and outputting 1080i...which to your TV is HD....

Your Sony will interpret any 720p or 1080i signal as HD and only give you
the "full" setting option. For example, a station's HD channel output will
always be on the "full" setting, even if the program on it is not HD. But
you should be able to tune to the station's non-HD channel, get the signal
in NTSC and then you have your other "wide screen" choices, including a
"normal" 4:3 picture.
I use a CableCard with my Sony but when I did have a cable box I did not
have any problem with this. It only output the HD signals from the HD
channels. So, I would say that either there must be a setting you can
change on your cable box or it is defective or it is a screwed-up design.

This is the correct answer. You can change the settings in the cable box to
allow "passthrough" of other modes in addition to upconversion to 1080i;
depending on the way the TV interprets different signals (I'm not familiar with
the Sony) might be better for you.
