I'm not sure how long ago it started but no matter what theme I use, the
start menu appears in white... even when that is not what it is set to in
the theme. I have hundreds of themes, including many I got straight from MS.
In the theme creator I can see some text is black, some blue, some even
pink, but not on my PDA. It used to be correct, but no more. When I select
some themes, that have light backgrounds and the text is obviously supposed
to be dark, it isn't and I can't see the text at all. Does anyone know what
happened and how I fix it?

Sounds like you might want to download Tweaks 2k2 from
http://www.tweaks2k2.com/ This program will allow you to fix the text on the
Start (menu) for free once. As allowing you to do a number of other useful
things. Your registry has a bad setting in it, perhaps from a theme you have
loaded that had white text? That is not being erase when it is removed.

Well, I changed the start menu text to black, then I changed to a default
theme that I know has black text in the start menu and it went back to
white, even though the box is still checked in Tweaks for black text.
Something else is wrong.
