Just wondering if I can go from a Linux distro to a Windows 7 or 8 distro and if so How do I burn the disk as bootable.

Just burn to dvd or make a bootable usb. The iso you download from m$ will be bootable all ready.

So I just DL the .ISO files on my Current Linux Mint distro and strait up drag and copy them over to my 8gb USB thumb drive and it will work as a bootable drive when I select the thumb drive as the first boot device in BIOS ?

No.. You can use a 3rd party app to make the usb bootable. Get unetbootin. You can also make it bootable with cfdisk. Then extract the contents to the usb drive.But unetbootin is much faster...
