If I install & format a second sata HD to store things in, what do I need to do to show its partitions the original boot HD?

Your chipset drivers which should include SATA should make the drives visible from your XP operating system.

If you are unsure you can download SIW (Free):

The standalone version on the left of the page will suffice. Identify your mothrboard manufacturer and model number. Go to the manufacturer website and download the appropriate SATA drivers you need.
