Basically what I need out of this build is gaming and speed for processor intensive tasks like video converting. The most important thing I've decided to go for however is having the computer be as blue as possible. blue everywhere!

just read a review here on toms about the 650, I would stay away from it unless it has a specific feature you must have, it is a scaled down version of the 680i from what the review said.
offering half the pipelines for pcie and fewer pci slots if I remember.
680i if you need sli, or p35 if not.
the review is there maybe you should read it, I dont have a link but if your reading this you are half way there, just go to reviews for mobos.
