Concerning signal input, does it make a difference if the signal goes
into the TV via cable or via RCA plugs or S-video?

Depends a great bit of what the source is. RF is for direct Antenna or Cable
into the set's tuner circuits. RCA (Composite) is for direct connection from
other components to the set via the RCA (Composite) inputs. S-Video is for
connecting the Video only from other components into the S-Vidor input of
the set. Each input has it's own functions and uses.
Generally asking this question, one would designate what source they are
using, be it a HD-CATV Box, HD Set Top Box, VCR, DVD, or other item.

Fair enough. I have a DVD player with progressive scan, a VCR and a
Scientific Atlanta cable box. The TV has one S-video input, 1
composite video RCA input and 1 component RCA input. So I was
thinking that the cable box would go component, the DVD would go
S-video, and the VHS player would go component.

The techie at Pioneer recommended that I get a home theatre system to
act as a junction box, but the room is 10x12 and right next to the
bedroom of an obnoxious little old lady (condo). So I do not want nor
need additional speakers or loudness. I also do not want to spend a
couple of hundred dollars more, if I can get away with it.

Is your TV progressive scan, or an HDTV? If it is, you'd probably want to
get a switchbox so both the cable (assuming that's HD too, I mean) and the
DVD player can feed into the component input. If it's only a progressive
scan display, or not at all, then you can just have the DVD player going
into the component input. YOu won't be able to see 480p, but it will still
look a lot better. And you might as well feed the cable box into the RF
input, since that isn't any better than S-video.

Just as a general rule you should use the best connector type that you
can in your case that would be "S" then the RCA (composite) then the F
type (RF).
