Open Windows Explorer and look under Tools -> Folder Options, then open the File Types tab; you should get a list of file types, descriptions and which application is used to open the file type, the list is stored in the system registry.
When you select [double click] a file, Windows searched the file association list for a matching file type, and runs the relevant program with the file name as a parameter.
