Does anyone know of a good heat monitoring program with which you can adjust your fan speeds with? I'm getting a new graphics card soon and I want to be able to change the fan speed if it needs it. Also, in the future I may plan on learning how to overclock my CPU, so this would apply to the fan there as well.

Any input?

See, that's what I can't figure out. I have heard other people talk of speedfan as well as being a good program. I've even had it myself for some time. However, half of the things in my computer it doesn't even read. I've fooled around with it for quite some time, but I still can't see any place to adjust fan speed.

Does anyone know what I might be missing here?

The fans need to be connected to your motherboard CHA_FAN ports.
