I just bought a new laptop, which came with
office 2007 student trial version, which requires payment
after a few uses.. Can I uninstall this and install
my office 2000 pro which i have already paid for.
Or do I install and leave both on computer.

I have Office 2000 Small Business edition installed on Windows 7 64. I would uninstall the trail 2007 office software, then install Office 2000 the program you will be using. Either way you mentioned will work fine.
