Defragmentation of remote volumes

why can`t defragment hard disk on the network with remote volumes

Because remote volumes don't work in the same way as local volumes. The OS can't address individual sectors or clusters on a remote volume. Indeed, it has no knowledge of the low-level structure of the remote volume.
