I am going with a Q6600 and 2GB Crucial 800. I plan on overclocking to about 2.93. Should I leave the cooling stock for the CPU and not cool the RAM? If I should, what would everyone recommend using to cool the CPU and RAM?

Definitely get an aftermarket cooler, the Arctic freezer 7 pro is cheap and should be able to handle 2.93 in a normal room. Mine is handling 3.0 with no problem but my room is freezing. Don't worry about cooling the ram, its not necessary.
