Quick question re: thermal compound

What is worse...too little or too much? I see different amounts in pictures. I have heard you should use a saran wrapped finger to push in and spread it evenly, then use a credit card to scrape off the excess, leaving a flat surface...using it almost like spackle to fill in drywall?
