I know that this application attempts to control fan speeds and reduces the speed to make them quieter when they are not needed (IE when idle), but what else does it do and for a user like me who doesn't care about the extra noise, would it be better if I just disabled it?

depends on you fan speed set the profile to performance for slow fan

optimal for a fast fan
