General Purpose CPU for Business Apps (mostly) and virtualization?

I am looking to purchase a new system. I am not a gamer.

I want to use it for business applications (mostly), some entertainment (multimedia), and virtual sessions for testing/learning/evaluating server applications (Windows & Linux). I also do some software development and would like to keep my system use separate by using virtual sessions (i.e. Windows XP with dev software in one session so it doesn't get corrupted by "playing" in others).

I am looking at CPU's like "Core2 Quad Q6600" or better, and also "Xeon 5310 Core 2 Quad" or better.

I am looking at running the new XEN 4.0, or perhaps VMWare Workstation 6.x.

Assuming that I pick the appropriate motherboard and load my system with 4-8GB RAM (to start), what would be my best purchase option?

I can never see any Server CPU's versus Workstation CPU's comparisons.
