I'm setting up a RAID on a NAS that'll be used for 3D rendering with applications like Maya and mental ray.

I am debating between a RAID 10, a RAID 5, or just saving some cash and going with a RAID 1.

I've seen mentions on this board have mentioned that RAID 5 isn't good for heavy workloads with lots of transactions... would RAID 5 be a mistake for 3D rendering?

Rendering is usually compute bound. In other words get the fastest cpu you can afford and don't worry about raid performance (except for backup). If you are editing video however a fast raid array can be important.
