I am looking to build a mega workstation for analysis of biological data (think datamining). I will be using MATLAB, WEKA, java based programs to crunch numbers. I was wondering if I could get some help.
What I am currently looking at:

Tyan S2696A2NRF Server dual socket motherboard
But for pretty much everything else, I am open. Case, Power Supply, Cooling fans, etc are all up in the air. any help would be greatly appreciated! If you feel the processors are not the best either please tell me. I am new to workstation builds.

Hm... I have a workstation, it's not fulfilling the same purpose that yours is but it's still a powerhouse.
For the CPUs I'm not sure if you can get the X5365s yet, but they're quite powerful. If you have the ability to acquire them then do so, you'll not regret it.
As for the RAM, I'd just fill up all the slots you have. I'm not sure if you specified it but you could definitely take advantage of 64bit memory addressing. Other than that you look pretty good. I'm assuming you have some sort of backup so I won't go into that. Your system looks pretty good though.
Now the reason I say to fill up your RAM slots is because FB-DIMM is quad-channel.
