If you must get an OCZ PSU then get the GameXStream, it's a much better quality unit than the StealthXStream. Also, newegg has the GTS 320 for $279.99 with a $30 rebate i think (XFX brand).

you could probably drop the mobo and get a GA-P35-DS3R instead, $30 cheaper and it has no DDR3 support (only differences), which is something you won't need in this PC's lifetime probably.

Cases... you can probably do with a Centurion 5, very affordable ($40-50), great design, and it's tool-less. Oh yeah... And if you need to lower costs, drop the Thermalright and get an Arctic Cooling freezer Pro 7 for $33 instead (which will allow you to reach your desired OC and probably beyond that.)

It's going to be pretty unbalanced with a Q6600 and a lesser card than the 8800GTS, I'd say drop the Q6600 then and get an E6550/E6750 (Since you want to OC anyway) and get a 8800GTS. As far as CPU Coolers go, nothing beats Tuniq Tower 120 when it comes to air cooling.

I personally don't think that the quad cores can quite justify their price. An overclocked 6550 would be a better value and virtually the same performance as far as gaming is concerned.

700w is way too much. It doesn't hurt anything, but that system could probably run fine on 300w if you wanted to. I'd look at something like this:

Fortran is a good brand and it's big enough to allow for a second card if you want to add one later.

Knock that cooler down to the Artic Pro 7, should perform as well for $30 and your approaching that magical $1000 price point.

Yup, after these changes it will be a very beautiful setup. :D
