Which processor should i pick

Hi

I am trying to build a Gaming PC for about £750 (inc OS) and i've gone over budget on me quotes and one of the areas is lowering the Processor but i'm not sure what to

The Processor I wanted was the E6850 but now i'm thinking i'll have to lower it to E6750 or AMD AM2 X2 6000+

is there much difference and what would you go for

E6750 is almost as good as the E6850 and much cheaper. Combine it with a GA-P35-DS3L or similar mobo.

Agreed. That budget should have room in it for a e6750 and a GF8800GTS without any trouble.
