I will be doing some gaming along with video/internet usage using a 8800GTS 320 MB card. What make/model of keyboard and mouse would you recommend?

I love my Logitech MX3000 combo, although I'm not a huge gamer. I owned a Logitech combo before this (Comfort Elite) and I enjoyed it as well. My dad has a Microsoft combo, I don't know the name and I know he's happy. Be aware though, you must place the dongle in line-of-sight if it's IR and the range is not as good as BT. I would probably suggest Bluetooth and Logitech (I'm a little biased, I have a logitech wireless controller too, Wingman Cordless - and a Logitech Webcam too). I am a very loyal buyer as Logitech has yet to diappoint me.
