Ok i know i have to set up the RAID array through the bios and setting up the drives for WINDOWS XP through F6 and a floppy disk. My board...the GA-P35-DS3R has an INTEL MATRIX controller as well as a Gigabyte. SHould i Install both floppys that have drivers for both controllers when installing windows?

Also in windows if I get the drives setup ok and windows loads, do I also need to install a Software Manager in Windows?

You only need to use the floppy with the F6 procedure for the RAID controller that you will be installing Windows to. The other RAID controller can have its drivers installed once Windows is up and running.

It's also a good idea to load the software utility for the RAID controller after Windows is running so that you can see the status of the array.
