1) Any PCI-E graphics card should work with any PCI-E motherboard.
2) No, one high-end card will in most cases give you the same or better performance as two mid or low end cards. Plus if you get 1 8800GTS and aren't happy with its performance, you could always SLI that.

No, but think about it. If 1 high-end gives you as good or better performance than 2 mid levels, your upgrade path is still open. You may not have the funds now, but in 6 months you probably would and you can boost your performance even more at that point.
