Budget AM2 SLI build with room to grow

I'm looking to build a new system that I don't have to drop a lot of cash up front (so I can justify doing it), that I can use some parts that I have on hand, and that will be an ongoing project that has plenty of head-room to upgrade over time. This will be replacing an Athlon XP 2400, 2 GB RAM, GeForce 6600 AGP system, so just about anything is going to be faster. I will probably dual boot with M$ and 64bit Suse Linux.

Would I be better served just getting a better video card later instead of going SLI with 2 cheaper models? According to Nvidia, you can get a pretty good boost going with a second card later (of course, they want to sell more cards too). Is a 600 watt PS enough, especially if I go with SLI?

First things first, what is this computer for?

One good video card is better than 2 not so good ones.
The amount of power is not nearly as important has the quality of power IMO. Just make sure you get a quality PSU.

If you're not getting the CPU for 6 months, would suggest you save your money until you can get everything in 6 months. In 6 months prices will drop and new products will be out. Given you won't be able to run the machine for 6 months, no CPU until then, I think you're better off waiting for everything.
