Everything I can find on the web that has 2 or more drive bays uses the "newer" SATA drives.  I have several 500MB IDE drives I want to use - I don't want to have to purchase new drives.
 
Can anyone point me to a gigabit enabled (at least dual) drive enclosure or nas/san/appliance that allows me to use my IDE drives?
 
I also mention - I'm trying to get something on the cheap (<$200)??

Not much on the market with the requirements your looking for, IDE w/ gigabit LAN and costing less than $200. Your best bet may be to be build your own NAS.
 
You can snag a 3ware 7506 4 IDE port or a 7506 8 IDE port controller card off ebay for $50 or less.
 
You can get a PCI gigabit NIC from newegg for as little as $10.
 
A NAS is easy to build and can be done with previous gen parts, they don't require much by the of processor or memory. Check out www.openfiler.com for free NAS operating systems.

Don't have first hand experience with this but there are IDE to SATA adapter available like this

if you have old PC laying around then stick them in there plus a gigabit lan card.  Turn that old pc in linux base NAS for 20 bucks.  I have 2 PC running with all sort of size drives ranging from 120GB to 500GB.  One PC is Athlon 800Mhz 128MB SDRAM and a P4 1.4Ghz with 512GB RDRAM.  I use the basic naslite+
