OK here are the main components I've decided on so far.

eVGA 680i SLI 775 A1
eVGA 8800GT 512mb SSC
C2D e6750
OCZ 2gb ddr2 800 Platinum EL Rev2 (maybe 4gb)

Overclocking the 6750 to 3.0ghz to make use of the 800mhz ddr speeds. Can anyone recommend any decent ram and a decent power supply to run this setup? Also, should I be looking at additional cooling?

I don't want to upgrade to quad cores yet... waiting for their pice to drop a bit (in Aus).

Don't go 4GB unless you have 64bit OS. The 32bit OS will only recognize 2.7-3.5 GB of RAM.

Also, should I be looking at additional cooling?
I would get new cooling since you're going to OC, just be on the safe side. You can try the Arctic Cooler Pro, Tuniq Tower, or the Thermaltake Ultra 120.

Rather than getting the OCZ GameXStream 600W, you can get the OCZ StealthXStream, which is $20 less. Only difference is the amount of cords (3 rather than 6 SATA cords) and it doesn't glow blue from LED.

With dual-core, you shouldn't need more than 500, but OCZ models are good deals.

And unless you are going to do some extreme gaming/multimedia, you will NOT need more than 2 Gigs of ram. This is because with 4 Gigs of ram, if you do not use all of it, it slows down your computer by using up more bandwidth for the extra memory thats unused.

I personally recommend 2 Gigs of Corsair XMS2 PC6400 for some overclocking power. Timing is (4-4-4-12) and costs around $100 with a $40 rebate on newegg.

Arctic Cooler Pro for a "decent" overclock like what you are doing.
Thermaltake Ultra 120 for "high/extreme" overclocking.

And make sure your case has good ventilation.

Yeah , OCZ STEALTHXSTREAM is good too, i forgot to say that

If you're not going to do SLI, I would suggest the Corsair 520 which should be plenty enough and has pretty much the same characteristics as the 620.

Ram, Crucial Blastix DDR2-800

Thankyou for all of your informative responses. While I'm on the topic of cooling, do you guys have any favourite cases with decent ventilation?

Is it advantageous to construct a RAID setup or just buy the one HDD?
