Headed the right direction?

What are the better boards for overclocking right now? I had been looking at ASUS Maximus Extreme but I'm not sure some of the 'future-minded' benefits are worth it, since the new chip architecture is coming out soon.

On the other hand, one can spend forever waiting for the "next" big thing.

My goals:

1) Gaming machine that I can;
2) Overclock & experiment;
3) Using GeForce video cards and;
4) Watercooling

Also: If I go with the E8400 3.0ghz, should I go with 800mhz ram or 1066?
