Need help on ocing E6750 with 800mhz 4-4-4-12 ram

I recently made a new system and got a E6750 but the shop was out of ram so I made do with old. But today i got the ram I bought which is Geil 800mhz Ultra 4-4-4-12 timings. I had me E6750 running 3.48ghz but when i put in ram on, Cpu-z said it was running 500mhz and 5-5-5-18 timings.I've tried different settings but everything becomes unstable.
I have a P5K mobo how can I fix this problem?

P5K what? SE? Deluxe?

When overclocking i like to manually set everything - set the ram to the lowest divider and manually set the ram timings too to something slack, then see if you can get stability, and if you can work your way from there.
