CPU, MB and RAM

I am going to be putting together a new system over the next few weeks, and was wondering if someone here could help me out with a few things.

First, I am not interested in overclocking.
Second, I don't mind the price/performance ratio leaning a bit to the performance side, but I don't want to spend twice as much money for 10% increased performance.

With that in mind, I have pretty much decided to go with the E6750, unless someone can offer a reason why not. It's a fast chip for ~200 bucks, so I don't think I can go wrong with it.

My question is more about which MB and Ram to go with. I have been out of the game for a while, but as I remember it, you want a board that supports the same FSB as the processor, and RAM to match. Since the E6750 supports 1333 FSB, I would want a board that also handles 1333 and DDR3 ram to match. But from what I can tell, unless I wanted to overclock, which I do not, DDR3 violates my second condition above. I don't really want to spend twice as much for the ram if I will only realize marginal performance gains. Further, if the consensus is to go with 800mhz DDR2 ram, then a board with 1333 FSB is wasted, right? So I could save some cash and get a DDR2 board. Right now, the only thing I know for sure is that I want a board that supports RAID0.

So what do you guys suggest? Should I stick the E6750 in a DDR2 board and run at 800FSB, or go with the DDR3 and 1333?

BTW, if anyone wants to help me out with another question, I am going to go with an 8800GT for video and 2 500GB 7200.11 HDDs. What kind of power supply should I look at, and as well, if I am not overclocking, will the OEM HS/Fan with the E6750 be good enough or should I look to Zalman?

Thanks a lot! That info really helps. I was actually leaning towards the Gigabyte DS3R, for the raid support. The reason for 2x500gb drives is that 500gb is the smallest 7200.11 I can get from my supplier, but at 140 bucks a drive, it makes sense cost wise. Thanks again for the input!
