Okay, I know I can't use my Dell's hdd on a different computer but what if I installed my own version of Vista on the hdd? Would I be able to switch the hdd over to my new rig and use it as the master drive?

Should work fine - you'll have to reinstall everything, but the hardware is standard. The only thing to check is whether it is IDE or SATA.
