What PSU would you choose for 8800GT SLI overclocked to 700/1900/1000 at least w/ Thermaltake DuOrbs?

Personally, a Corsair HX620 if I wanted modular cabling, which I highly recommend having, it's very convenient. If I didn't care about modular cabling It'd be a tie between the HX620 and the PCP&C Silencer 610W. Both have SeaSonic internals I believe, and both are quite capable power supplies.

I recommend the Corsair 620HX.
