Maybe this is a bad question, but if I switch from RAID 0 to just 2 independent disks, will I lose the data on them?

And another question. If I do not lose data from switching from RAID to independent, can I reverse that switch and go from independent back to RAID without data loss?

You will have to reinstall your OS to boot up.

I have never tried to install on one disk and hook up the other to retrieve data. I suspect this is unlikely and all data will be lost as it is 1/2 written to each disk.

Your best bet is to back your data up on a 3rd unit before turning the raid off.
 
You can buy a disk that is the same size or larger than the RAID array.
Use Acronis to image the array to the single disk.
I don't know about imaging a single disk back to an array. I think I have done in the past, but cannot remember.
But either way, once you break the array, you data is gone.
Backup/transfer your critical information to an external disk FIRST before you do anything.
