seeing that the VGA charts has not been updated with the recent 8800 GTS 512...

Which would be better if I went and built a system today

the 8800 GTS 512 or
8800 GT 512 OC?

I agree.

The GTS has a better cooler. That fact alone is almost worth the extra money.
