I'm trying not to go over 900.
 
I already have a few things from my current setup like case and dvd-rw drives.

Will everything work fine together? I'll probably be running XP for now. But I think I pretty much got everything Vista compatible.

My Son does a lot of video work.  He has a dual - quad  setup with an FX series GPU  (Approx 3 Grand) work station (Mac).
 
He tried Vista 64 Bit - Ran slower than 32 Bit XP so he ditch Vista.  So you might want to consider staying with XP.  Believe MS will bring out NEW operating system 4th qtr 09.  Also MS is suppose come out with SP3 for XP, OFCOURSE after SP1 for Vista.
 
Added - Might consider Going to CL4 Memory, Not Much improvement (3 to 5%,), However if you do Overclock - the CL4 would be better.

Yeah, I will be with XP for awhile. Figured I would just predict my upgrade path ahead of time.
 
I do pretty mild stuff, I'm a commercial photographer and do weddings occasionally where my partner shoots video. I'd love a decked out mac pro. I do my video on my windows box and run aperture for photos on my macbook. It can barely handle aperture.. I want to get everything on one machine. So I guess I'm going to Lightroom.
 
I probably wont do any overclocking. I'm too worried about stability.

What are the characteristics of what you do?   Is it cpu bound, use lots of memory, lots of sequential data transfer?
On the assumption that you do lots of sequential data transfer,  I would suggest two hard drives.  Put your input source on one, and your output source on the other.   If you do lots of multitasking, then lots of memory is essential.   The 3.3gb max you will see with a 32-bit os(either XP or Vista) will be limiting.   Vista-64 bit flies with lots of memory, so you might reconsider that.   Vista is where microsoft is putting it's development dollars, not XP.  It makes little sense to me to invest in a soon to be  obsolete os.
 
As to the cpu.  If you do lots of multitasking, then consider a quad, otherwise you can get a faster duo for the same price.  The launch of the E8400 is imminent and a better price performer than the E6750.
 
From your wish list, I would reconsider the psu.  It is a tier 4 unit on this list:http://www.xtremesystems.org/forums/showthread.php?t=108088  Look for a tier 2 or better unit of about 400w or better.
 
The retail cpu will come with a heat sink with paste pre-applied.

Why the SLi motherboard and then a single bottom of the barrel graphics card?

 

$135 for 4gb of G Skill Cas 5 RAM?  Crazy...

 

The Raptor is also a waste.

 

The power supply is crap.

  

I would go with something like this:
