I currently have an external RAID SCSI Raid array connected to a Dell PE server.

The server is old and I want to upgrade it to a faster machine, however I want/need to retain all the info on the Array.

What I planned on doing is getting a new server and configuring it.
Then shutting down the old one, take out the SCSI card the Array is connected to, place it in the new server and "viola" the drives would move along.

Is that the way to go about it? Will that work? Does the card retain it's configuration after it is removed from the server?

Yes. The configuration is kept on both the drives and the SCSI RAID card. As long as you are only moving the data and not the OS, you should be good to go.
