How hard is it to setup two SSD drives in RAID 0?

Depends on the controller, the SSD's you use and your level of skill/experience.

It is normally not that hard. It the same process with HDD.

You Mobo's User Guide should tell you which SATA port to use and what is the BIOS setting to enable it and which key to press when booting to access the RAID BIOS software to define your RAID.
