Need more info from you. You say you want to upgrade CPU but those 2 cpus require more then just a cpu upgrade. If your board supports a e4600 it wont support any AMD and vice versa.

So you may need to upgrade your mobo/ram..and so on. Depending on what specs your current system you wish upgrade has.

Ya im upgrading the mobo and ram too (Recommendations?) but i was more concerned on which processor would guive me better gaming perfromance. I currently have an BFG 8800 GTS (512) vid card and its factory OC but its bein bottlenecked bad by my old P4 3.0 ghz processor. Which processor would let me get the best performance out of my vid card?

Well, for gaming only I would probably go dual core (ie, the e4600).  Once OC'ed, that will be one sweet (and quite unbottlenecked) system.

cant find the e4600 on toms charts, but it handily beats the e4300 in most cases.

I would not get the E4600, Just get the E4500 and clock it to the same speed.  Save the $20.
