New build, ram reqs? 1600fsb?

Alright so I'm building a new computer (to play Age of Conan) and would like to know what speed ram i should be looking at (and if there are any known brands that would be incompatible with my chosen mobo). Also, any reccomendations to switch parts are welcome as well.

CPU: C2D E8400
GPU: BFG 8800GT OC2 (675/1950Mhz)
Motherboard: GA-EP35-DS3R (OC version, 1600FSB...how does this benefit me?)

I am looking for 2x1gb memory...I would like to go 2x2gb, but I don't believe my 32bit WinXP Sp2 supports it. (Can I go 3gb? is this better?)

Oh, and I am looking to OC the CPU (to 4.0 at least) and the ram. I usually lean toward Mushkin.

Also, I am not planning on buying new hard drives but the ones I have currently are SATA 1.0 I think...that's still okay right?
