This is my first build and im having trouble deciding on how i should build it.
My main question is:
should i go with a Core 2 Duo 3.0GHz or a Core 2 Quad 2.4Ghz? Witch is better for gaming?
And should i go with 2 video cards or just 1 powerful one?

IMO Go with Core 2 Quad 2.4 for future proofing, since more and more quad core games will come in the future. For now Core2 is absolutely fine.

IMO go with 1 powerful one, there are still many problems in SLI/crossfire. And it will be depend on your monitor. If it's <= 22" (1680x1050), one powerful card will be just fine.
