 Core 2 Duo (775) Intel E8400 3.00GHz 6MB with Scythe Infinity cooler.
 
 
2. Memory
 
 
DDRAM2 OCZ 4096MB 800MHz Reaper EPP HP XL CL4 (2x2048) : http://www.ocztechnology.com/produ [...] dwidth_4gb
 
3. Graphics Card
 
Geforce 8800GTX.
 
Which motherboard would you recommend for this system? SLI support would be nice. I was thinking about the X38.

X38 supports CrossfireX, not SLI.  790i is the latest chipset supporting SLI.

I've read in these forums that there's data corruption issues with the nVidia 7x0i chipsets.  I'd do some research to make sure it a thing of the past or totally inapplicable to my situation before I'd go anywhere near a 7x0i chipset.

Well, I guess I I won't mind not having SLI support. I doubt I'd use it anyway - I'd be more likely to buy a new card, I reckon.
So I guess that leaves me with X38, which is pretty solid I hear. Which model should I be looking for then?

X48 is the latest Intel chipset.  X38 is also very fast.  The ASUS and Gigabyte boards offer high end products geared toward enthusiasts.  ASUS came out with a newly redesigned BIOS with the X38 chipset.  I use it on my Maximus Formula X38.  I know the ASUS (ROP) Republic of Gamers offer the upgraded BIOS features.

If buying a new X38/X48 board I did and I do recommend paying the ~$20 difference (NewEgg) and getting the X48 Rampage Formula:  http://www.newegg.com/Product/Prod [...] 6813131284 vs. the Maximus Formula: http://www.newegg.com/Product/Prod [...] 6813131227
 
The X48, as I understand it, is basically a higher-binned X38, with slightly better overclocking potential.  However, as you can see both these boards are bad-@$$ and I don't think you can go wrong with either.

I would hardly call an Asus, Gigabyte or DFI X38 "settling".

IMO yes, quite good, it'd likely be my choice as that price point, but I'm prejudiced.  Look at these as well, and they're not  costly:
